Good morning, my loverly luvahs.
I hope everyone's week is going by super swiftly.
Yesterday was my first day in the office since we earned our real estate licenses, and our day was busy, busy, busy! My meal times weren't too incredibly horrible, but they definitely could've been better, for sure. In my defense though, our family all went out for lunch and dinner together and the tab was picked up by others on both occasions, so I'm super grateful to have such amazing people in my life who feel the need to feed me. I'm most certainly not going to complain about getting to eat for free all day long.
Considering our options were an absolutely fabulous hole in the wall BBQ joint and a well known, tasty burger joint full of delicious yet unhealthy choices, I feel I made some pretty good decisions.
So, shall we begin?

Breakfast: Blueberry Lemon Overnight Oat parfait that
was flipping *AH-MA-ZING*, and the recipe will
be posted tomorrow! It was so filling and delicious.
I also had a mug of coffee with 1 Nunaturals stevia packet and ice water.
Lunch: A hearty, warm, & delicious bowl of Brunswick stew which
is essentially a sweet and smoky pork and vegetable soup.
I also had one bite of the pictured BBQ sandwich which I
wrapped up and saved for the hubs to eat for lunch today.
That was all washed down with a couple of glasses of unsweet tea.
The hubs and I also shared a square of super thin and crunchy
cornbread which I really, really liked...
especially when dunked in that thick and hearty stew!
Snack: I had a handful of my nemesis, the roasted almond.
These little diddles are like frickin' crack to me!
I have started weighing and making my own snack packs
because it is so, so hard for me to stop eating them right out of the bag.
I enjoyed these with my once a week can of Coke Zero and some ice water.
Supper: We went to Andy's which serves the famous Orangeades
(we all know what my husband drank), and I had a root beer b/c
it just seemed like the right thing to do. I then ordered the smallest
cheeseburger they had with lettuce, pickles, ketchup & mustard,
my hubs got a chicken philly with mushrooms, green peppers, & cheese,
and then we shared a small order of french fries.
See? My choices weren't all that bad. I could've gotten a grilled chicken sandwich instead of the burger, but I distinctly remember ordering one from there before and it ended up being that gross rubbery "chicken" that tastes like it's pumped full of sodium and other nastiness, so I opted for the "always fresh, never frozen, made to order" burger instead.

Thank you! It was actually quite easy! The oats are so thick, they're easy to scoop and smooth. I'm sure when you make it they will be just as perfect 🙂

Oooh, I bet it was an exciting first day of work!
All of your food looks great and you really shouldn't feel bad or guilty at all. No food choice is bad unless you didn't enjoy what you ate.
My favourite afternoon snack is (soy or Greek) yogurt with coconut flour, maple syrup and a little vanilla stirred in.

Amen to that, sista! You know...you mentioning coconut flour mixed with something else is the 3rd time I've seen that today. I'm going to have to google some recipes b/c I have tons of it!

You take such beautiful photos. Oh man, while my husband was in the military and we lived in NC, we had Andy's all around us. Those Cheesesteaks are amazing!!

Look at you, Ms. Working Woman (not to be confused with a working girl...completely different things)!!! Glad you're having fun on your first days back. Nice work on the healthy choices (relatively to your other options)! I don't eat pork, so no Brunswick stew. I've been eating a lot of fat-free Greek yogurt for afternoon snacks lately. Tryna get my life back together after a less-than-perfect holiday food season.

Never heard of Brunswick Stew until now! But it doesn't really sound like my thing since I don't like smoky flavors too much. Favorite afternoon snack? Almonds (great photo, BTW!), babybel cheese, or a piece of dark chocolate. We don't have an Andy's either! (Probably a good thing for me, though. 😉

I really don't like smoked flavoring too much either, and this Brunswick stew only had a small note of it in the background. It's slightly sweet with just a hint of smoke b/c of the pork. Almonds and I have a love hate relationship. I adore them too much!

I'm in NC, but I've never heard of Andy's. Hmm! But I just moved here 2 years ago, so there's a lot that I still don't know about. 😉

If it ever becomes monetarily feasible NC would absolutely be on our short list of places we would like to move. #1 Portland OR or northern CA
#2 (and more probable) a move to NC splitting time between a house in the men's and a house on the coast (because if you're going to daydream, why not do it big;)
