This week, Easter has been at the forefront of my mind. The holiday has always been a big deal in my family. Not only because is it a time of worship and thanksgiving for the resurrection of Jesus Christ, but also because it is a time of good, old-fashioned, fun, family fellowship.
I live for my family. They are my life.
My late maternal grandfather, Reverend Hiram McElrath, was a Southern Baptist preacher and was the cornerstone of my mother's side of the family. He raised his children and grandchildren to love the church and to love the Lord. Nearly every major holiday my grandparents, cousins, aunts, uncles, and parents would celebrate and worship together. Most years, Easter was no exception (To read more about my grandfather and what he meant to me check out my other blog, Where's Weasley?).
This year will be the first time in my 30 yrs that I will not be spending time with my own family. I will instead be heading to North Carolina with the hubs to spend time with his grandmother, parents, brothers, aunts, uncles, and cousins. I expect their celebration will be almost identical to my family's: full of smiles, laughter, and an over abundance of Easter ham.
Everyone on Earth has leftover ham after Easter. If you don't, then I am mighty impressed!
Today's recipe is the answer to the question we will all have on our minds after the holiday: Whatever will I do with all this ham?!?

The idea for this recipe was adapted from two places:
1. One of my favorite restaurants, Charleston's Cafe, has an INCREDIBLE Monte Christo sandwich. It is piled high with ham and turkey, swiss cheese, strawberry jam, and then it is dunked in egg batter and pan fried...and then sprinkled with powdered sugar. I LOVE this sandwich, but let's face it, it is LOADED with calories (but well worth it).
2. There was a BRILLIANT ham and cheese slider recipe from The Recipe Club that blew up on Pinterest and was served at my wedding shower and at my sister-in-law's engagement party. These little gems are delicious and everyone raves about them, but they are loaded with butter and the M word! (Which we all know how I feel about the M word)!
So, that being said, I put two and two together and came up with this!
Oooey Gooey, Skinny Mini Monte Christos
Ingredients
- 24 King’s Sweet Hawaiian Rolls
- 12 oz. spiral cut ham
- 12 oz. roasted turkey
- 6 slices quality swiss cheese I used Sargento
- ¼ cup sugar-free strawberry preserves
- ½ cup low calorie cranberry juice
- 2 tablespoon poppy seeds
Instructions
- Preheat oven to 350°.
- Place rolls on a cookie sheet or jelly roll pan lined with parchment paper.
- Using a serrated knife, slice open each roll.
- Add ½ oz of both turkey and ham and ¼ of a slice of Swiss cheese to each roll and close to form a little sandwich.
- Cover with tin foil and place in the oven until heated through and cheese is melted. About 10-12 minutes.
- While sammies are heating, add strawberry preserves and cranberry juice to a small sauce pan and place over medium heat, bringing to a boil.
- Once boiling, lower heat and simmer until sauce is reduced and forms a syrup. Remove from heat.
- Pull cookie sheet from oven, remove tin foil, and gently pour preserve mixture over each sandwich.
- Sprinkle with poppy seeds and serve immediately.
