Healthy Carrot Cake Baked Oatmeal
With Easter right around the corner, y'all know I had to jump on the bandwagon and post another carrot cake-inspired recipe! I'm pretty sure the stuff is a gift from heaven and was served in celebration when Jesus Christ was risen.
At least that's the way I like to see things.
Although they're drizzled with a little bit of maple cream cheese icing (because you can't have carrot cake without cream cheese frosting, right?!?), this carrot cake baked oatmeal is healthy, and here's why:

Here's what you'll need for the Carrot Cake Baked Oatmeal with Pineapple:
- Old-fashioned rolled oats (certified gluten-free if needed)
- Shredded carrots
- Crushed Pineapple
- Canned lite coconut milk
- 1 large egg (Vegan option: 1 tablespoon ground flaxseed + 1 tablespoon water)
- 1 can LITE coconut milk or milk of choice
- Pure maple syrup
- Ground cinnamon, ginger, & nutmeg
- Baking powder
- Sea salt
- Pure vanilla extract
- Optional toppings &/or add-ins: raisins, pecans, coconut

- Cream Cheese (Vegan option: dairy-free cream cheese alternative)
- Pure maple syrup
- pure vanilla extract

Carrot Cake Baked Oatmeal wi)th Pineapple (and Maple Cream Cheese Icing
Ingredients
For the Carrot Cake Oatmeal Bake:
- 1 ½ cups rolled oats certified gluten-free if needed
- ½ cup shredded carrot packed
- ½ cup crushed pineapple drained
- 1 teaspoon vanilla extract
- 1 large egg
- 1 13.6 oz can lite coconut milk (or milk of choice)
- ¼ cup pure maple syrup
- 1 teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ⅛ teaspoon freshly grated nutmeg
- 1 teaspoon baking powder
- ½ teaspoon sea salt
- Optional additions:
- 2 tablespoon unsweetened shredded coconut optional
- ⅓ cup golden raisins optional
- ⅓ cup chopped pecans optional
For the Maple Cream Cheese Icing:
- 2 oz cream cheese softened
- 1 tablespoon pure maple syrup
- ½ teaspoon pure vanilla extract
- 1-2 tablespoon milk of choice
Instructions
For the Carrot Cake Oatmeal Bake:
- Preheat oven to 375 degrees (F), and spritz a 9" x 13" baking dish with coconut oil spray, set aside.
- Combine all ingredients in a large bowl and stir until very well mixed.
- Pour oatmeal mixture into the prepared baking dish and bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
- Cool for a few minutes before drizzling with the maple cream cheese glaze.
For the Maple Cream Cheese Icing:
- Add all ingredients, except milk, to a medium bowl and, using a fork, mush and mash all of the ingredients until well mixed. If the icing is too thick, add in milk, a tiny bit at a time, until it reaches a drizzling consistency.
- Drizzle on top of the Carrot Cake Baked Oatmeal and serve.
