Oooey Gooey, Skinny Mini Monte Christos

The classic sandwich recipe transforms into gooey little bites of heaven

Ingredients

  • 24 King’s Sweet Hawaiian Rolls
  • 12 oz. spiral cut ham
  • 12 oz. roasted turkey
  • 6 slices quality swiss cheese I used Sargento
  • ¼ cup sugar-free strawberry preserves
  • ½ cup low calorie cranberry juice
  • 2 tbsp poppy seeds

Instructions

  • Preheat oven to 350°.
  • Place rolls on a cookie sheet or jelly roll pan lined with parchment paper.
  • Using a serrated knife, slice open each roll.
  • Add ½ oz of both turkey and ham and ¼ of a slice of Swiss cheese to each roll and close to form a little sandwich.
  • Cover with tin foil and place in the oven until heated through and cheese is melted. About 10-12 minutes.
  • While sammies are heating, add strawberry preserves and cranberry juice to a small sauce pan and place over medium heat, bringing to a boil.
  • Once boiling, lower heat and simmer until sauce is reduced and forms a syrup. Remove from heat.
  • Pull cookie sheet from oven, remove tin foil, and gently pour preserve mixture over each sandwich.
  • Sprinkle with poppy seeds and serve immediately.
