Preheat oven to 375ºF and grease an 8-inch round or square baking pan w/ butter. Set aside.
Combine 3/4 cup flour, sugar, dry yeast and salt in a large mixer bowl, and stir until blended. Combine milk, water, and butter in a small microwave-safe bowl. Microwave on HIGH in 15-second increments until lukewarm, but not hot to the touch. Use a food thermometer to make sure the liquid is between 120° to 130°F. Add to flour mixture. Note: The butter won’t be completely melted!
Add mixer bowl to the stand mixer w/ the dough hook attached and beat for 2 minutes at medium speed, scraping bowl occasionally. Add 1/4 cup flour; beat on high speed for another 2 minutes then stir in just enough of the remaining flour (1 to 1-1/4 cups) so that the dough forms into a ball.
Knead on a lightly floured surface until smooth and elastic and springs back when lightly pressed with 2 fingers, about 6 to 8 minutes. Cover with a towel and let rest for 10 minutes.
Cut dough into 12 equal pieces, shape into balls then place in prepared baking pan. Cover with a towel and let rise in a warm place until doubled in size. About 30 minutes.
Bake for 20 minutes or until golden brown. Remove from the pan by running a knife around the edges and invert onto wire rack; brush with additional melted butter, if desired. Serve warm on a platter w/ homemade compound butters and your favorite jams and jellies.
