Preheat oven to 350 degrees and spray a 9" x 13" baking with non-stick coconut oil spray.
In a large bowl, add apples, figs, cider, vanilla, coconut sugar, cardamom, nutmeg, cinnamon, and salt and stir until all of the apples are well coated.
Pour apple mixture into the baking dish and bake for 30-35 minutes or until apples are bubbling and tender.
For the Gluten-free Cinnamon Crackers:
Add all ingredients to a food processor and pulse until the dough comes together and forms a ball.
Place the dough in between two sheets of parchment and and roll into a large thin rectangle, about 1/16" thick.
Cut the dough into squares or circles and place on a baking sheet lined with parchment.
Bake for 12-15 minutes or until golden brown.
For the baked brie:
Remove the brie from the wrapper and place in a small oven safe dish.
Bake for 12-15 minutes or until melted and slightly oozing.
Top the brie with the vanilla and cardamom spiced apples and serve with the gluten-free cinnamon crackers.
