Ingredients

tablespoon
almond flour

tablespoon
cocoa powder
½
teaspoon
baking powder
tiny pinch of salt
1
egg
or flax egg
½
cup
sweet potato or pumpkin puree
2
tablespoon
unsweetened applesauce
or more sweet potato or pumpkin

tablespoon
strong coffee
25
drops SweetLeaf Stevia® Peppermint Mocha Sweet Drops™
or to taste
1
small splash pure vanilla extract
1
drop peppermint extract
optional, but I think it adds the perfect amount of peppermint flavor
¼
cup
homemade whipped cream or coconut whipped cream mixed with 5 drops Peppermint Mocha Sweet Drops™
chocolate shavings

Instructions
In a small bowl, combine all ingredients (except whipped cream) and mix very, very well.
Pour into either one large or two small coffee mugs and microwave for 2 minutes. If it still looks a little raw, microwave for 30 seconds more.
Serve with a dollop of whipped cream & chocolate shavings.
