Watermelon Rum Runner Cocktails

  • 2 cups fresh watermelon juice
  • 1 shot (1.5 ounces) Pineapple Rum like Bacardi Pineapple
  • 1 shot (1.5 ounces) Citron Rum like Bacardi Citron
  • 1 shot (1.5 ounces )Silver Rum like Bacardi Silver
  • 1 shot Melon Liquor like Midori
  • 1 shot triple sec or simple syrup or coconut rum!
  • 1 cup pineapple juice
  • Fresh or frozen blueberries and fresh mint for garnish


For the Watermelon Rum Runner Cocktails:

  • Add the flesh of 1/2 of a standard seedless watermelon, roughly 5 or 6 cups, to a blender or food processor and pulse until smooth and no chunks remain.
  • Place a fine mesh sieve over a glass pitcher and add the blended watermelon, straining the juice from the flesh. Stir the flesh inside the sieve to help the juice flow strain faster.
  • Stir rum, melon liquor, triple sec, and pineapple juice into the watermelon juice, and mix well.
  • Pour into mugs filled with ice and top with blueberries and fresh mint.
  • Enjoy!


Note: To make simple syrup, boil one cup water with one cup sugar until the sugar completely dissolves. Remove from heat and use in the Watermelon Rum Runner cocktails once cooled.
