Spicy Thai noodles are a quick and easy dinner recipe that can be ready in under 20 minutes! The smooth, velvety peanut sauce mixed with the crunch of the fresh veggies will make you want to add this to your weekly meal plan.

Thai Peanut Noodles w/ a Spicy Peanut Sauce

For the Spicy Thai Peanut Sauce:

  • 1 cup creamy peanut butter or cashew butter!
  • 2 small cloves fresh garlic peeled and roughly chopped
  • 2 inch cube fresh ginger peeled and roughly chopped
  • 2 tbsp teriyaki sauce
  • 1 tbsp soy sauce tamari, or coconut aminos (use 3 tbsp coconut aminos if you avoid soy)
  • juice and zest of one fresh lime
  • 1-2 tsp Sriracha chili sauce to taste
  • 1 tbsp toasted sesame oil
  • salt & pepper to taste (if needed at all)
  • 1 lb pasta of choice or fresh veggie noodles of choice
  • 1/2 fresh red bell pepper diced
  • 1/2 fresh yellow bell pepper diced
  • 2 stalks celery thinly sliced
  • 1 handful baby carrots or 1 large carrot diced
  • 1 large handful fresh cilantro chopped
  • 1/4 cup roasted peanuts chopped
  • 1 tbsp black sesame seeds chopped


  • Add peanut butter, garlic, ginger, teriyaki sauces, soy sauce, lime juice & zest, Sriracha, and sesame oil to food processor or blender and blend until well combined.
  • Spoon peanut sauce into the bottom of a large bowl and set aside.
  • Cook noodles according to package directions, making sure to salt the water when it comes to a boil.
  • Right before the noodles are done, carefully ladle 1 large spoonful of the starchy cooking liquid onto the peanut sauce and whisk to combine. If it's still too thick, add another ladle and whisk. Continue adding hot water, a ladle at a time, until the desired consistency is reached.
  • Drain noodles and immediately toss with the spicy peanut sauce.
  • Throw in fresh veggies and cilantro and continue tossing until well mixed.
  • Garnish with more peanuts, sesame seeds, and fresh cilantro and serve.
