Homemade caramel apples are easy as pie to make, and are loaded with Biscoff cookie butter to give them a bit of added pizazz! And plus also? They’re made with coconut milk and coconut sugar, making them an awesome vegan and healthier treat for fall!

These homemade caramel apples are a perfect fall treat, but because they’re so simple and delish, you’ll want to make them year-round.
Autumn days filled with pumpkin patches, hayrides, corn mazes, apple cider, and firepits grab ahold of my soul, soothing my anxieties as softly as the golden leaf of a pecan tree falls to the ground underneath.

I grew up making homemade caramel apples with my family, and they’re such a huge part of my life, I even had a build your own caramel apple bar at our wedding!
Spending time in the kitchen with my mom and brother as we opened a tableful of caramels is such a fond memory of mine, and I loved watching the candies change in the microwave as the bowl spun around in circles, the caramels bubbling and swirling into a pond of gleaming gold.

Making Caramel Apples
Making caramel apples can be tedious, especially if you have to open a whole bunch of those tiny square caramels!
I’m too impatient to do that now so I went ahead and created a new method of my own that’s so simple it should be a sin:
- Open a can of coconut milk, add in some coconut sugar and a heaping spoonful of Biscoff cookie butter.
- Bring to a boil and let it bubble for 4-5 minutes, until it reduces down to a gorgeous, bubbling bowl of deliciousness.
- Coat your apples, decorate them, and allow them to sit in the fridge for a few minutes so the caramel can set.
- VIOLA! Homemade caramel apples with very minimal work!
A lot of caramel apple recipes call for butter, corn syrup, and several other things to help the caramel thicken and stick to the apples. I chose to use cookie butter instead because, hi cookie butter, but also because it keeps them vegan, adds a bit of flair, and thickens the caramel without adding anything else!

Tips for Making Caramel Apples
To keep the caramel from completely dripping off of your apples, try to follow these simple tips:
- Remove the wax from your store-bought apples by soaking them in a hot water bath for 5-10 minutes and drying them completely.
- Bring apples to room temperature and make sure they are completely dry before coating in caramel.
- Place dipped apples on a chilled tray lined with parchment paper.
- Decorate the caramel apples immediately after coating.
- Place in the fridge and allow the caramel to set.

Homemade Caramel Apples w/ Biscoff Cookie Butter Caramel
Ingredients
- 1 cup coconut sugar
- 2 cups full-fat canned coconut milk
- 1/4 cup Biscoff cookie butter
- 1 tsp vanilla extract
- 6-8 apples I used grannysmith & honeycrisp
- sprinkles or toppings of choice i.e. chopped nuts, shredded coconut, chocolate chips, etc
Instructions
- Remove wax from store-bought apples by placing in a hot water bath for 5-10 minutes. Dry completely.
- Line a baking sheet with parchment paper and place in the fridge until ready to use. Prep apples by sticking popsicle sticks through the TOPs of the apple, located where the stem is, so they will stand up straight once coated in caramel.
- Combine all ingredients in a medium saucepan and bring to a boil, whisking occasionally, until the mixture is dark and thick. About 15 minutes.
- Remove baking sheet from the fridge and coat the apples with the caramel, immediately sprinkling them with the toppings of your choosing.
- Place coated apples onto the prepared baking sheet until all of the apples are dipped. Place them in the fridge for 5-10 minutes to allow the caramel to set before serving.
