Heat a griddle or large skillet over medium-high heat and spray with coconut oil spray.
Line a baking sheet with parchment or wax paper. Set aside.
In a large rectangle casserole dish, whisk together eggs, milk, pumpkin, & pumpkin pie spice until well mixed.
Soak the bread on both sides in the pumpkin mixture until well saturated then immediately transfer to the heated griddle. Cook the french toast 3-4 minutes per side or until golden brown and cooked through. Transfer cooked french toast to prepared baking sheet.
Repeat steps 2-3 until all french toast is cooked.
Allow the french toast to cool for 5 minutes then slice into strips or fingers.
Place the french toast strips in a single layer on the prepared baking sheet then pop in the freezer until completely frozen.
Transfer the frozen french toast sticks to a large freezer bag.
When ready to eat, heat a few french toast sticks in the microwave in 30 second increments until warm. Cut into cubes or into appropriate sizes for your child.
Serve with fresh fruit or with a fruit puree or apple sauce as a replacement for syrup.
