Hummingbird Cake Daiquiris

Hummingbird Cake Daiquiris are like sweet nectar from the Gods! Packed full of fresh fruit, tropical booze, and rimmed with a nutty cream cheese icing, these easy frozen cocktails will make your heart flutter straight into summertime.

Ingredients

For the Hummingbird Cake Daiquiri:

  • 2 cups frozen pineapple chunks
  • 2 frozen bananas
  • 2 shots 3 ounces cake vodka or vanilla rum
  • 2 shots 3 ounces pineapple rum
  • 1/2 cup milk of choice try lite coconut milk or vanilla almond milk
  • pinch of ground cinnamon
  • Fresh pineapple slices for garnish

For the Cream Cheese Frosting:

  • 4 oz. neufchatel or cream cheese softened
  • 2-3 tbsp powdered sugar or honey
  • 1/4 cup chopped toasted pecans

Instructions

For the Hummingbird Cake Daiquiri:

  1. Add all daiquiri ingredients to a high powered blender and blend until smooth.
  2. Pour into glasses rimmed with cream cheese and pecans and garnish with fresh pineapple.
  3. Enjoy!

For the Cream Cheese Frosting:

  1. Add the chopped pecans to a small plate and set aside.
  2. Using a fork or small whisk, mix all of the cream cheese frosting ingredients until the powdered sugar is fully incorporated.
  3. Twist the rim of two small glasses (or one large glass) into the cream cheese mixture then dip and twist the rims into the crushed pecans so the lip of the glass is coated in cream cheese and pecans.
  4. Fill glasses with Hummingbird Cake Daiquiris and serve.
