Strawberry Balsamic Bruschetta w/ Gorgonzola Cheese

This strawberry balsamic bruschetta is one of the easiest recipes I’ve ever made.

Not even kidding, I whipped this up in about 15 minutes flat.

That’s my kind of a quick and easy recipe.

Have you ever opened your fridge to find a whole hoopla of things that needed to be used then, all of a sudden, the wheels in your head started turning and you had come up with 7,000 ideas in 5.2 seconds?

Yeah…this is that.

I had gorgonzola left over from Super Bowl, strawberries left over from the strawberry-a-saurus, and an organic loaf of thick and chewy bread we had bought the day before but hadn’t used yet.

The hubs and I had a ton of errands to run yesterday and by the time we got back home, we were starving. I remember seeing a recipe for roasted strawberry bruschetta from somewhere (Pinterest maybe?), and I’ve always wanted to try it. So I finally did!

The bread was so toasty and crunchy and the strawberries had gotten just warm enough to start releasing some of their juices while the Gorgonzola was bubbly and browned which added a punch of flavor to the entire dish. Then the balsamic reduction just took it over the top and gave it a touch of elegance and sophistication.

Absolutely heavenly.

Strawberry Gorgonzola Bruschetta w/ a Balsamic Reduction

Ingredients

  • 2/3 cups balsamic vinegar
  • 1 Nunaturals stevia packet
  • 8 small slices of thick organic whole wheat or Ezekiel bread
  • 1/4 cup Gorgonzola cheese (crumbled)
  • 8 medium fresh strawberries (washed, thoroughly dried, and sliced)
  • 1/2 ounce whole raw pecan halves (chopped)

Directions

Step 1
Turn oven to broil.
Step 2
In a small saucepan over high heat, whisk together balsamic vinegar and stevia packet and bring to a boil. Immediately lower heat down to a simmer and cook until it reduces by half and turns into a thick syrup (about 10-15 minutes). Set aside.
Step 3
Add sliced bread to a baking sheet and pop under the broiler until lightly browned. Flip each slice and brown the other side.
Step 4
Sprinkle some of the cheese onto each slice of bread, layer on some strawberries, sprinkle with more cheese and then with the chopped pecans.
Step 5
Pop the bruschetta back under the broiler until the cheese is melted and bubbly, about 2-3 minutes. Drizzle with balsamic reduction and serve.
Step 6
